  5. Add seasonings to potatoes. Season to your liking … I love garlic, so i add more. lol BAMM
  6. Make a hole in the middle of the potatoes, add eggs & scramble in middle, then fold into potatoes.
  7. Add the fresh spinach at the very end, stirring till wilted. AND DONE!
  8. I serve it with fresh fruit and OJ and my son loves it. In his words "this is bomb mom" :-D
