  1. Blend the mango chilli blend mix in a food processor. Till smooth-gritty texture is attained. (Add a dash of double cream-optional if creamier texture is desired). Set aside. Marinate the chicken and set aside for 10-20 mins.
  2. Heat a drizzle of oil in a sauce pan (medium-high heat for 3-5mins) Shallow fry the thighs(Skin down) for 5-10mins. Meanwhile preheat the oven at 220’C for 10 mins. Pour in the blend mix and simmer for 3-5 mins at high heat.
  3. Place the thighs in a ceramic oven dish. Top with fresh thyme. Cover loosely with oven foil and place in the middle rack and cook for 25 mins. Remove cover after 25 mins and cook for further 10 mins at 200’C
