Instructions to make Lamingtons:
  1. Preheat oven to 180°C
  2. Place the eggs and sugar in an electric mixer and whisk on high speed for 10–12 minutes or until pale, thick and tripled in volume
  3. In the meanwhile, put the flour and baking powder in a bowl together and then sift three times to make sure they are mixed through and set aside. Also melt the butter
  4. Sift ½ of flour mixture over the egg mixture and gently fold through using a large metal spoon. Repeat with the remaining flour
  5. Add melted butter and fold through
  6. Pour the mixture into two shallow square tins lined with non-stick baking paper and bake for 16–18 minutes or until sponges are springy to the touch and come away from the sides of the tins.
  7. Remove from the tins and cool completely on wire racks
  8. Once cooled, spread blackcurrant jam on one sponge and place second on top. Then cut the sponges into roughly 6cm squares
  9. Make the icing by placing icing sugar, cocoa powder, water and (melted( butter in a large bowl and whisk to combine. And place the shredded coconut on a plate
  10. Using a fork, dip 1 lamington in the icing and roll in the shredded coconut. Place on a wire rack or tray to set
