- To bake the cake,sieve all dry ingredients together,flour,baking soda,salt, cardamom powder and keep aside.
- In a mixing bowl add sugar and eggs and mix well. Add in the yogurt and oil and mix nicely.
- Fold the dry ingredients into the wet ingredients and mix till no lumps.
- Fold in the shredded carrots and mix well.
- Take a greased and lined square baking tin and pour the mix into it.
- Bake in a preheated oven at 180 degree Celsius for 35-40 minutes till a skewer comes out clean.
- Demould the cake when little cool and let it cool further.
- For the chocolate frosting,mix the icing sugar,cocoa powder,butter, cardamom powder and milk and mix in a double till a pouring consistency is achieved.
- For the assembly of lamingtons,cut the cake into 2 inch square pieces and dip each piece in chocolate frosting and then roll in dessicated coconut.
- Put the lamingtons on a clean wire rack to set and after setting, serve them at tea /coffee time.
