In a heavy saucepan, bring cream and milk to a boil. Remove from heat; whisk in chopped chocolate until smooth. In a large bowl, whisk together the yolks, sugar and salt. Whisking constantly, slowly pour hot chocolate into yolks.

  1. Place Chocolate chips in seperate heat proof bowl
  2. Whisk egg yolks to smooth texture in mixing bowl
  3. Combine sugar, milk, & heavy cream in small pot. Continously stir on high till boil
  4. Combine milk/cream mixture to egg yolks by whisking in bowl then, add back to pot.
  5. Whisk custard on medium low heat (do not break the eggs) for aprox. 4 minutes.
  6. Add custard to chocolate chips, whisk together.
  7. In a blender, blend pot de creme mixture until smooth
  8. Pour in ramekins and serve.
