This is a very popular stir-fry dish in Japan. It's a dish consisting of vegetables, pork, prawns, squid, etc. stir-fried and thickened with potato starch. The dish is called 'Happō-sai' in Japanese and that means 'Eight Treasure Ingredients' as the number eight is the lucky number in our culture.
To begin with this particular recipe, we must prepare a few ingredients. You can cook squid and mushroom stir fry using 9 ingredients and 6 steps. Here is how you can achieve that.
The ingredients needed to make Squid and mushroom stir fry:
- Prepare 300 grams frozen squid squares, diamond cut
- Get 6 medium size dry shiitake mushrooms
- Prepare 1 small green zuchini
- Prepare 2 tbsp oyster sauce
- Take 1 tsp. chopped fresh ginger
- Take 1 tsp finely chopped garlic
- Take 2 tbsp water
- Take 2 tbsp oil
- Take 1/2 Japanese leek sliced in 1/4 inch rings
Clean the squid thoroughly, cut into pieces, rinse with cold water. Heat up a pot of water and bring it to boil. Heat up a wok or large cooking pan, and add ginger and sesame oil. Stir fry for a minute, and then add squid and mix well.
Instructions to make Squid and mushroom stir fry:
- Start the wok with the oil and add the garlic and ginger, stir for 10 seconds.
- Add the cubed zucchini, then the leeks and mushrooms
- Mix the oyster sauce with the Water in a small bowl and then add it to the wok, stir some more. - Add a bit more water if needed.
- Lastly, add the squares of squid and stir well for about two more minutes and it is done!
- The mushrooms have to be rehydrated before adding to the pan. Fresh mushrooms work well too.
Add michiu and thick soy sauce. I was cooking some dishes for a dinner and needed something showy for the table. I had some frozen squid in a diamond cut pattern. I soaked some dry shiitake mushrooms and used half a zucchini I had left. It turned out fantastic and my guests loved it.
