My BLTs are the best BLTs because I marinate my tomatoes in Italian seasonings, salt, pepper, olive oil, and balsamic reduction.   1. Lay bacon flat on a griddle or large frying pan and fry till golden crispy
  2. Meanwhile butter 1 side of each slice of bread
  3. Drain bacon on paper towel. Dump grease and wipe pan with a paper towel.
  4. Heat same griddle on med heat and toast bread starting with the butter side down. Flip bread and place cheese on 4 slices. Toast till golden on each side.
  5. If you want egg, while bread is toasting fry eggs in a small amount of butter in a non stick skillet.
  6. Place 5 half strips of bacon evenly on top of cheese, then lettuce, 2 slices of tomato, grind some pepper on tomato, spread mayo on top slice of bread and wallah!
  7. For California style: layer bacon on top of cheese, lettuce, tomato, ground pepper on tomato, then 1 and 1/2 slices of avacado, or enough to cover bread then mayo on top slice and press down gently. The avacado against the mayo keeps it from slipping out.
  8. For Breakfast style: Place egg on top of cheese, then bacon, lettuce, tomato, ground pepper and spread mayo on top slice. ENJOY!
