  1. To bake the cake,sieve all dry ingredients together,flour,baking soda,salt, cardamom powder and keep aside.
  2. In a mixing bowl add sugar and eggs and mix well. Add in the yogurt and oil and mix nicely.
  3. Fold the dry ingredients into the wet ingredients and mix till no lumps.
  4. Fold in the shredded carrots and mix well.
  5. Take a greased and lined square baking tin and pour the mix into it.
  6. Bake in a preheated oven at 180 degree Celsius for 35-40 minutes till a skewer comes out clean.
  7. Demould the cake when little cool and let it cool further.
  8. For the chocolate frosting,mix the icing sugar,cocoa powder,butter, cardamom powder and milk and mix in a double till a pouring consistency is achieved.
  9. For the assembly of lamingtons,cut the cake into 2 inch square pieces and dip each piece in chocolate frosting and then roll in dessicated coconut.
  10. Put the lamingtons on a clean wire rack to set and after setting, serve them at tea /coffee time.
