Instructions to make Punjabi pindi chana:
- In a pressure cooker add soaked chana,chana dal,salt,water,whole spices and black tea, tied in a thin clean cloth as shown in picture.(only 1 tsp cumin seeds is to be added now and rest will be used later. Pressure cook for 5 whistles.
- Take out the boiled chana (along with water if left) in a bowl and discard the whole spices and tea mix.In a mixer grinder make onion paste (add 2 green chillies)and tomato paste separately.
- Pour oil in the kadahi,once heated add cumin seeds and ginger garlic paste.saute it then add onion -greenchilli paste and roast till brown.Add powdered spices and salt,mix it well.
- After 2 minutes add tomato puree,2 slit green chillies and cook till oil separates.
- Add boiled chana and dal and saute till the thick consistency. Switch off the flame, cover with a lid and leave for 5 minutes. Serve hot with puri or paratha.
My MOST FAVOURITE style of chana masala! This one's often requested by my near and dear ones. The recipe does not have onions and tomatoes added to it hence its dry unlike Punjabi chole. Onions are served in raw form. Pindi chana is basically a more flavourful version of chole masala as compared to regular chana masala.
