Amritsari Kulcha with Chole or Dal Makhani is an authentic Punjabi meal of Amritsar. It is a heavenly delight on the palate and plate. But my family love to eat this Stuffed Kulcha as it is. Punjab is known for some scrumptious North Indian Dishes like Chole , Palak Paneer , Sarson Ka Saag, etc,.
Steps to make Amritsari chole kulche:
- First, pre-soak the chana overnight. Now in a pan add the pre-soaked chana add water, salt and make a potli with tea leaves, bay leaf, dalchini and black cardamom. Now boil the chana. Reserve the stock.
- Now in a pan add 3 tbsp of ghee and some mustard oil. Then add bay leaf, whole red chilli, black cardamom, whole jeera. Then add the crushed ginger and garlic. Fry it. Then add finely chopped onion and fry it. Add very little turmeric, add 2 tbsp of coriander powder and red chilli powder. Mix the masala and let it cook. Add very little water.
- Now mix the masala and add the chopped tomatoes.
- Then cover and let it cook. When the tomatoes is fully cooked add garam masala powder, shahi jeera. Add some chole water.
- Now add the chole and the water. Add some silt green chillies. When it comes to boil add the crushed anar dana and very little nutmeg.
- Just smash some chole for thicker gravy.
